Incredibly flavorful, delicious, and moist. The perfect recipe when you have browning (or black) super ripe bananas. If you have ripe bananas and don’t have time to bake, you can always peel them and pop them into the fridge until you have time.
½ cup Butter
¾ cup Sugar
1 tsp Vanilla Extract
2 Eggs, beaten
4 bananas, mashed
1 ½ cups Whole Wheat Pastry Flour
¼ tsp Ground Clove
¼ tsp Cinnamon
¼ tsp Ground Ginger
¼ tsp Nutmeg
1 tsp Baking Soda
½ tsp Salt
Cream together butter & sugar. Add vanilla.
Mix together mashed banana and eggs, add to butter and sugar. Combine.
Mix together dry ingredients and gently mix into butter, et al.
Pour into greased muffin tins
Back at 350 for approximately 25 minutes. (Or in a loaf pain for approximately 55 minutes)
